Fermented Honey Garlic Recipe
This fermentation is so easy it hardly needs a recipe. You simply need to add peeled garlic cloves into a jar covered by raw honey. I like to add one extra little ingredient (listed in the recipe below) that keeps botulism at bay, and finally you need time. In just a few weeks your fermentation will be ready to enjoy.

Ingredients
- Equipment: 8 or 16 oz glass jar
8-12 small heads of garlic
1 tbl vinegar
1 pint of raw honey
Directions
- Add Vinegar
Start by adding 1 tablespoon of vinegar to the bottom of your glass jar. (This step is optional, however I like adding vinegar to keep the ph of the ferment lower) - Peel and Smash
Peel all the garlic cloves and lightly smash each one. - Add Your Garlic To The Jar
You can fill your jar anywhere from 1/4 to 3/4 the way full with garlic cloves. (see note 2) - Add Raw Honey
Pour your honey over the garlic. Stop halfway through and mix with a spoon to make sure the honey is thoroughly incorporated and fully covers all the garlic. Leave at least 2 inches of headroom at the top of your jar. - Everyday do these Two Things
For the first 4 days flip and turn your jar a few times to allow the garlic and honey to fully meld together. Once the honey has thinned you do not need to continue this. Secondly burp the lid everyday for the first two weeks to let out the gases from the fermentation. (important SEE NOTE 3 or video) - Enjoy
All though you can enjoy your honey garlic at anytime in the process, your honey garlic will be ready after 4 weeks. To mellow out the pungent garlic even more, allow it to continue for up to 8 weeks. Once it is done you can take this daily for immune boosting purposes or cook with it. This can be stored on the counter or in the cupboard for up to a year!

Notes
- Use local organic raw honey. The thicker the better. Do not use pre-peeled garlic cloves.
- The ratios are adjustable. You simply need to make sure however much garlic you have it is full covered by honey and has two inches of headroom at the top of your jar.
- During the fermentation process gases are building up in your jar that need to be released. This is why it is important to burp the lid a few times a day for 3 days, and then once a day for the first two weeks. If you skip this step you may find an exploding jar. All you need to do it twist the lid enough to release the air and then shut it again just finger tight. You may hear a small pop as the gases are released. There are also fermentation lids you can buy for this.
