Bacon & Gruyere Egg Bites

minutesMorning can be hectic, but having a protein-packed, grab and go breakfast ready to go makes all the difference! If you love Starbucks’ egg bites but don’t love the price, you’re going to love this homemade version-they’re just as creamy. full of flavor, and so much more affordable.
Ingredients
4 slices of bacon (cooked & diced)
6 large eggs
1 1/4 cup cottage cheese
1 1/4 cups cheese (white cheddar, gruyere, or gouda)
1.5 tbl cornstarch
black pepper
Directions
- Pre-heat oven to 300 degrees F
- Place an oven safe dish filled halfway with water on the low rack
- Cook Bacon, strain, and dice
- Add all ingredients (except bacon & 1/4 cups of the cheese) to the blender.
- Blend for 30 seconds to a minute.
- Pour into greased 9X12 glass bacon dish and top with bacon and remaining cheese. (alternatively use parchment paper on the bottom for very easy removal and clean up.)
- Bake 20-25 Minutes and remove to cool for 5 minutes.
- Cut into squares and enjoy!

Notes
- Once thoroughly cooled place in gallon freezer safe bag to save for later.
- Double the recipe and freeze left overs for future snacks or breakfast.
- No need to defrost, just heat it up or pop in the air fryer for a minute.
- For very easy clean up and removal use parchment paper on the bottom of the baking dish. This is the only way I make these.
